Summer Recipe: Green Asparagus with Almond Butter


It feels like Summer has already started - 25 degrees and the first Summer thunderstorms arrived. Are you looking for a quick and easy recipe for such warm Summer days when we wanna spend as much time outside as possible and don't really have the energy to stand in the kitchen for too long? Then this Green Asparagus with Almond Butter might be just the right thing for you!

I tried it the first time when I lived in Finland. My friend Tiina showed me the recipe and since then we got around "real" cooking way too often because this is way too easy and delicious not to give in! But hej, asparagus contains lots of nutrition and vitamins - so you can't go wrong!

This recipe is so easy, you will probably laugh at me but since I underestimated green asparagus for such a long time, I think it is worth sharing! All you need is an amount of green and fresh asparagus of your choice and an oven - and that's it! You don't even need to peel the asparagus but just have to cut off the dead and dried out ends and put it on the iron sheet, sprinkle it with some salt and pepper, and some oil if you like, and put it in the oven for about 10 minutes at 200 degrees. When it's done, take it out of the oven and on a pretty plate, decorate it with some more herbs and spices, and drop a bit of almond butter on it. I love the salty taste in combination with the creamy butter. 

And then it is ready to enjoy! It is such a great recipe because it contains lots of good nutrition for your body and soul, it is super easy and quick and you can make as much as you like (depending on the size of your oven) - perfect for slow Summer nights or even Summer parties in the garden!


You need:

- A bundle of Asparagus
- salt, pepper, oil
- Almond Butter
- an oven

How to:
- wash the Asparagus and spread it on the sheet
- sprinkle some salt and pepper and oil if you like
- put in the oven at 200 degrees for about 10 min
- covered it with some almond butter when ready
...and enjoy!
